Bacon and Egg Muffins and The BIG DIG!
Today has been a busy one here at Porter Central. Starting early and ending entirely too late. In between, I have washed, dried and put away clothes.....and I think Mr.P's ADD has rubbed off on me because in the midst of ALL that I decided my closet needed it's bi-yearly overhaul, which then led quickly to the drawers. I had two meetings today and made it to one. Ran by the Goodwill, I have been on the hunt for old candlesticks to paint or stickle. Cooked a loaf of banana bread only to realize that the element in my oven is ka-PUT...ran out again to pick up a new element. And now for the last hour have been on the looking for my tropical banana bread recipe. And may I just say that digging through recipes when you are hungry is NOT the most intelligent idea. I still have NOT found my recipe and about ready to eat the wallpaper!

Fresh Apple Cake with a Caramel Glaze
Here it is. The recipe that practically defines what the perfect Autumn cake should taste like - in my opinion. The name says it all. Fresh apples and caramel. Hello? What could say Fall more than that?? It's a simple homemade spice cake with fresh sweet-tart apples and a smooth, ridiculously rich caramel frosting that pools at the bottom of the cake. Pass me a piece! mmmm, good!
How ever humble it may be, this little recipe has served me well over the years. First by garnering a blue ribbon for me at the State Fair of Texas and more importantly by being a never fail recipe. You can bake this simple cake over and over and it will come out the same every time. This is the kind of recipe I like to frequent, simple, straight forward and incredibly delicious.....every time. Hope you and your family enjoy it as well.
Fresh Apple Cake with a Caramel Glaze
INGREDIENTS
- 1 stick unsalted butter, room temperature
- 2 cups sugar
- 2 eggs
- 2 cups all-purpose flour
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1/2 teaspoon salt
- 1 teaspoon soda
- 4 cups sliced and peeled tart apples
- 1/2 - 1 cup pecans
- Caramel Icing, recipe below
WHAT TO DO
- Preheat oven to 350 degrees F.
- Grease and flour a 13x9x2 pan.; set aside.
- Combine all dry ingredients in a medium sized bowl; set aside.
- Cream butter and sugar until it's pale yellow and creamy. Add eggs one at a time. Slowly add flour mixture; mix until JUST combined. Add apples and nuts.
- Pour into prepared pan and cook @350 degrees for 40 minutes.
- Poke holes in hot cake and pour frosting over the top while it's still hot.
CARAMEL GLAZE INGREDIENTS
- 1 cup dark brown sugar
- 1 stick butter
- 1/4 cup evaporated milk
- 1 teaspoon vanilla
WHAT TO DO
- Bring all ingredients to a boil over medium-high heat.
- Cook 2 minutes boiling and reduce heat. Slowly simmer an additional 2 minutes.
- Pour hot glaze over hot cake.

SMITTEN WITH FALL: A Little Romantic Inspiration
Before the leaves fall and the sky goes gray take advantage of the mild yet cozy weather and the changing scenery to do something romantic with your sweetie. If you and your honey-dew find yourselves in the category of 'dinner and a movie', have no fear the Domestic Curator is here! I have come up with a few creative and innovative ideas to help you make the most of this romantic season.
Hayride
Many farms and fresh produce stands offer hayrides in the cooler months. Grab a blanket and thermos full of hot apple cider or wassail and snuggle up with your honey as you take in nature.
Ball Games
Baseball and football games are a wonderful way to get to know the true individual with which you are spending time. Jumping up, yelling and screaming for the local team will reveal your sweeties passion for the game. The quickest way to a man's heart is NOT through his stomach but by buying him a football ticket! This is one of the best date ideas for your guy! They would really appreciate a ticket to the big game. He WILL tell everyone what you did for him. Believe me.
Drive in the Country
If you are lucky enough to live in an area that has a change of seasons, take a drive out to the country. If it's equally beautiful in the city, take a leisurely bike ride. Either way, taking in the splendor of the changing countryside will fire up the romance factor and inspire you to get cozy.

Cotton candy and rides and games, oh my! What could possibly be more romantic than a county fair or festival? Put your favorite gal or guy on your arm as you take in the sights and soak up the relaxing atmosphere of the local fair. Go the distance by sharing cotton candy and winning the largest stuffed animal. Top your evening off with a memorable kiss atop the lighted Ferris wheel. This is also the perfect surroundings for getting to know someone better.

Who says that picnics are just for summer? Instead of sandwiches, pack some soup and tea. Cuddle up on a blanket, talk, and take in the beautiful autumn atmosphere. Now that's romantic!!

ALL ROADS LEAD TO ROME
The Eternal City celebrates its long history with monuments, churches and restored ruins that offer a glimpse into life during the days of the great Roman Empire. Here are my favorite picks for the top 10 essential attractions to round out your visit to Rome.
1. Colosseum
The Roman Colosseum is a testament to the architectural and engineering skills of the ancient Roman people. Offering insights into the culture that celebrated the Gladiator games at this huge entertainment arena.
The first bloody fight ensued in A.D. 82, starting a tradition of battles between men and beasts in a public forum with crowds reaching 50,000. The Emperor's entrance to the Colosseum is marked by a cross in the picture above on the far right side, lower corner. Placed here in the 13th century in repentance for all the blood shed in this place. Outside of the Colosseum, look out for the photo op beneath the Arch of Constantine,
which was built in 315 AD to commemorate the victory of Constantine over Marcus Aurelius .....the coup that made Christianity mainstream. With this one battle, a once obscure Jewish sect with a handful of followers was now the state religion of the entire Western world. From the Colosseum, cross over to Palatine Hill.
The word 'palace' comes from this place, once a home to emperors. Rome's first king, Romulus, and Rome's first emperor, Augustus, built palaces on this hills. The view from the garden is lovely. *To avoid lengthy lines, order tickets for the Colosseum, Forum and Palatine Hill online and ahead of time -- they're good for 2 consecutive days.
2. Roman Forum
This is ancient Rome's birthplace and Civic Center. The Forum was the center of city life, playing host to festivals, celebrations, funerals and rituals. The city grew around this grassy area that was the common ground between Rome's famous seven hills. It was empty marshland until the 7th century B.C. The area lost its luster and fell to waste around the 8th century A.D. and remained that way until excavations in the early 20th century.
Today, you can pick up a map for a self-guided tour of the structures and arches or join a tour group for a more detailed history of the area. Then climb to the top of Palatine Hill for sweeping views of the city. It's a Roman gem not to be missed.
3. Pantheon
For the greatest look at the splendor of Rome, the Pantheon is a must-see! Rome's temple to the 'gods' is remarkably intact, a great feat considering that it was originally constructed in 27 B.C.. After the fall of Rome the barbarians left the Pantheon alone because it was a church dedicated to martyrs and the locals didn't use it's stones as a quarry leaving the original structure intact and pristine. An altar was later added for Christian worship after the country abandoned its pagan gods and legalized Christianity. After the Renaissance, the Pantheon took on yet another role as a designated tomb for some of the city's artists and elite including the painter Raphael and former kings of Italy. The Pantheon's architecture has inspired copycats around the world with its tall columns, expansive interior and impressive dome with the sun shining through
the oculus, a 27-foot hole in the center of the rotunda. Truly an architectural feat of it's time.
4. Vatican City and Museum
A stop at Vatican City should be on your 'to see' list when in Rome. Even though it's located in Rome, Vatican City has been an independent state since 1929 and the smallest in Europe coming in at only 440,000 square meters. The first impressive site is St. Peter's Square itself designed by Bernini in the late 17th century.
As long as you're dressed appropriately (no bare shoulders or shorts or skirts above the knee), you may enter St. Peter's Basilica and see Michelangelo's Pietá,
a stunningly beautiful and sad sculpture. This is the only piece of artwork Michelangelo signed. EVER. Continue up to the roof where you can take in the view of the large square and city beyond. Also contained inside the Vatican's walls, the Vatican Museums hold Italian masterpieces, including Michelangelo's painted ceiling at the Sistine Chapel. It is overwhelming. You could spend the whole day staring at the ceiling of the Sistine Chapel and still not see everything.

5. Piazza Navona
Rome is known for beautiful and charming squares lined with restaurants and open-air cafes. The loveliest of them all is the large public square at Piazza Navona, once the site of sporting events at Domitian's stadium in A.D. 89.
6. Trevi Fountain
This bubbly Baroque fountain is a delight at night. Travelers' lore lists various reasons for throwing 3 coins in the fountain at the marvelous Trevi, with benefits ranging from finding love to returning to the city. Take some time to explore this masterpiece showing the god Neptune riding in a shell-shaped chariot led by seahorses.
7. Galleria Borghese
The Galleria Borghese is just as beautiful on the outside as it is on the inside, boasting a prime location in the sprawling gardens at Villa Borghese. Once a cardinal's mansion, inside the museum, you'll find Bernini sculptures including Apollo and Daphne and his take on young David preparing to take on Goliath.
8. The Ancient Appian Way and the Catacombs of San Callisto
In it's day, the Appian Way was the largest, widest, fastest road ever, the wonder of its day, called the 'Queen of Roads". Built in the 4th century BC, this has been Rome's gateway to the East.
The Appian Way stretches 430 miles to the sea where boats sailed to Greece and Egypt. Today it is lined with tombs, funerary monuments and some 40 catacomb sites.
While some may find the underground tunnel system of the Catacombs of San Callisto a bit morbid, in reality they celebrate the life of Christians during ancient Roman times. Rich in early Christian symbolism, such as the dove, fish and anchor, which functioned as a secret language among fellow Christians.
This artwork can be seen in various spots throughout the tombs. Not merely a macabre display, these Christian creations tell the story of life, death and resurrection and show a unique interpretation of the church's teachings of good, evil and eternity.
9. Castel Sant'Angelo and Museum


This fortress on the Tiber River was originally designed by the Emperor Hadrian to be used as a mausoleum for his own family. And it was certainly a resting place fit for royalty, rising above the city with glorious views. Over the centuries, it moved beyond its original purpose and served as a military fortress in 401 and later a papal residence and even a prison. It's now a museum where you may tour the apartments and see the statue of the archangel Michael rising above the terrace.
10. Spanish Steps
The Spanish Steps may be the longest and widest staircase in all of Europe, but that's not what draws visitors to this popular hot spot. It IS the place to be and be seen. An aqueduct powers the Barcaccia fountain that bubbles at the foot of the steps, while the Trinità dei Monti church rises far above the crowds at the top of the steps. But the best spot is somewhere in between the two. Grab a gelato and take a seat in the middle of the wide staircase and watch the city go by as beautiful people hurry into the nearby high-end shops, designer boutiques and restaurants.
I love visiting all of these places but if I had to pick my favorite Rome experience it would have to be a 'Rick Steves' Walk'. Grab one of his walking tour books and set out to discover the undiscovered Rome. Whether you follow the ever so chic 'Dolce Vita' stroll, the "Romantic Night Walk Across Rome' or another of Rick's favorites, you will soon uncover the true gem that Rome was and is today.

Pork Chops with Apple Cider Glaze
Pork Chops with a glossy apple cider glaze is really easy to prepare. While there's no starch or extra butter involved, the glaze reduces quickly to a thick, rich, sweet-tart apple syrup that is DELISH! This recipe tastes like Autumn. It has a ton of flavor and not many ingredients. In fact, it's a shinning example of what a few well placed ingredients can do for a plain piece of meat. The glaze is insanely easy to prepare and makes this pork chop dish one of the best I have ever eaten. It is the perfect pork chop recipe for Fall.

PUMPKIN-PALOOZA: A CARVING PARTY
How about throwing a pumpkin carving party on the Sunday afternoon before Halloween? It can be great fun for people of all ages. Whether you throw a party for your adult friends, your teenagers and their friends, a group of younger children or for a few families in the neighborhood, pumpkin carving has a magical way of getting everyone involved. You can help your friends unleash their creative side while carving the perfect pumpkin as well as set the season's radar to FUN!
When sending out invitations, indicate this party is BYOP—bring your own pumpkin, of course! Get creative and inventive when considering the invitations. If you'll be handing the invitations to guests personally, consider invitations attached to jack-be-little pumpkins. Something you could never mail; it will put a smile on their face and anticipation in their hearts.

Pumpkin Picassos can whittle original designs, but think about providing templates for the less artistic. Shopping the discounts in November, I have assembled quite a collection of carving tools, patterns, and templates over the years. Not to worry, you can pick these items up cheaply at any craft store or super center.
If the sun is shining, carve outside and enjoy the beautiful Fall weather and colors. Besides, your guests can be as messy as they like. However if it’s a blustery day {makes me think of Winnie the Pooh!}, move tables into a heated garage or work space indoors large enough to accommodate your guests. You might consider laying down newspapers or plastic to protect your floors and to ensure a quick clean-up for you. Set the mood with Autumn or Halloween decorations.
Your buffet can be as simply or elaborate as you like, choose your style.
A Halloween buffet keeps party goers in the spirit. You can request that everyone bring their favorite Fall snack or you can provide your own. Just make sure the food is not close to where pumpkin innards could be flying! Your guest-carvers will enjoy the relaxed atmosphere and might like to take frequent breaks to snack, toss a football or just roam around to admire everyone’s handiwork.
Just before sunset, have everyone finish carving their pumpkins in time for an official lighting ceremony in the yard. That’s when the pumpkins really shine! Each shell gets a candle, bringing the masterpieces to life. Whether it's a simple triangle-eyes and crescent-moon smile or more advanced creative carvings, candlelight makes everything magically beautiful.
After your guests are finished oohing and aahing, everyone can pack up their pumpkins for the ride or walk home. Package each guest's carved masterpiece in a paper bag for them and throw in a few extra votive candles and a festive Fall matchbook. Give them a hug and a wave as you send them off into the October night; knowing your friend's will cherish the memories they made at this year's PUMPKIN-PALOOZA!

Make it an annual tradition to host a pumpkin carving party. You will kindle all kinds of excitement and thrills as everyone remembers and anticipates your yearly party. Tradition has a way of catching on you know. As the years go by, you can pass the torch....or more accurately, the jack-o’-lantern....to the next generation; guaranteeing porches and walkways will continue to extend an eerie greeting for many years of trick-or-treaters to come.
