When life gives you lemons you make lemonade, right? Supposedly....so when your husband comes home with a BOX of Roma tomatoes what do you make? Lots of BLT sandwiches and roasted tomatoes, then what? Always on the look-out for great tasting and quick weeknight meals sent me on the search for something simple and quick to make with my box of tomatoes. Luckily, I didn't have to go far.....
This recipe is really so very easy to make and you can tell that it will taste great just by looking at the ingredients list. The tomato sauce is a pretty simple one consisting of onions, garlic, some seafood stock, tomatoes, oregano, and of course lots of fresh herbs. This pasta recipe called for canned tomatoes but my fresh Roma's were perfect to make this dish fresh and simple. Fresh tomatoes are wonderful when they are in season, but in the middle of winter canned tomatoes work well also. I had high hopes for this dish and it did not disappoint! It's definitely a keeper in the Porter family recipe box!
A quick and easy shrimp linguine in a tomato and seafood sauce
that is nice, light and healthy.....yet full of flavor.
Ingredients
1 tablespoon olive oil
1 onion, diced
4 cloves garlic, chopped
chili flakes to taste
1/4 cup seafood stock
1 (28 ounce) can plum tomatoes, crushed
or fresh Roma tomatoes, diced
1/2 teaspoon oregano
salt and pepper to taste
1 pound shrimp, peeled and deveined
1/2 cup fresh herbs such as parsley and basil, chopped
1 pound linguine
Parmesan Cheese
What To Do
Heat the oil in the pan.
Add the onion and saute until tender, about 5-7 minutes.
Add the garlic and chili pepper flakes and saute until fragrant, about a minute.
Add the seafood stock and simmer for 5 minutes.
Add the tomatoes and oregano and simmer until the sauce just starts to thicken, about 15 minutes.
Meanwhile, cook the pasta as directed
Season the tomato sauce with salt and pepper to taste.
Add the shrimp to the tomato sauce and simmer until cooked, about 2-3 minutes per side.
Remove the tomato sauce from the heat and mix in the parsley and basil. Top with Parmesan cheese.
Run out and buy yourself a large box of tomatoes while they are still in season......warm from the sun they TASTE just like SUMMER!
