Is it me, or is there is something magical about lemon poppy seed muffins? There is something about that fresh citrus tartness, mixed with the sweet cakey muffin and the distinct poppy seed flavor. It’s a good time. When making the muffins, I like to add lots of fresh lemon zest and lemon juice to the batter, and when they are hot out of the oven I spoon over a simple syrup made from freshly squeezed lemon juice and sugar, to add that extra lemon flavor. Like making pound cake, the syrup sort of traps in the moisture and freshness, and makes them last a little longer than most other muffins. These are perfect in the morning with coffee, or in the afternoon with a glass of milk. They are simple, fresh, and delicious. Enjoy!

Daddy's Favorite Meat Loaf
How many recipes do you have that look like this? Ripped quickly from the pages of old magazines. This is how at least 50% of my recipes appear. They are yellowed and stained from years of use and ingredients. A lot of my recipes have been yanked, clipped or torn from the pages of old periodicals. This is a scan of a meatloaf recipe I tore out of a magazine back in 1994. It is a staple here in our home. Nothing fancy and really easy to make. Just right for a cold Winter's night!

Pork Chops with Apple Cider Glaze
Pork Chops with a glossy apple cider glaze is really easy to prepare. While there's no starch or extra butter involved, the glaze reduces quickly to a thick, rich, sweet-tart apple syrup that is DELISH! This recipe tastes like Autumn. It has a ton of flavor and not many ingredients. In fact, it's a shinning example of what a few well placed ingredients can do for a plain piece of meat. The glaze is insanely easy to prepare and makes this pork chop dish one of the best I have ever eaten. It is the perfect pork chop recipe for Fall.
