One Cold November Night.......

.....found me all alone at Porter Central; highly abnormal for our household. There is ALWAYS someone or something underfoot. Finding myself in this 'blue banana' sort of situation was a pleasant surprise indeed. So what to do with my free night. The house is clean. Laundry maybe? Or, I could always finish Christmas decorating. Nope, I think I'll have a bowl of my favorite soup, listen to my Christmas music on Rhapsody and do a bit of cyber window-shopping. The laundry and decorating can wait until tomorrow because the night belongs to ME.....AND IT'S GONNA BE FUN! Well, at least relaxing and I'll take that any day!


CHICKEN ENCHILADA SOUP
From homemade chicken noodle soup to delicious skillet meals, chicken base, bouillon and stock are all essential to getting that homemade taste, but with less time and effort. I am ALL about good food with less effort. This recipe calls for chicken base; you can find it on the grocery aisle next to the chicken bouillon. Masa Harina is located next to the flour. It's a Southwestern Corn based thickening agent, it makes this soup. Really.
MAKES 16 - 18 SERVINGS

INGREDIENTS
  • 1/3 cup Vegetable oil
  • 1/4 cup Chicken base
  • 3 cups diced Yellow Onions
  • 2 teaspoons ground Cumin
  • 2 teaspoons Chili Powder
  • 2 teaspoons Garlic Powder
  • 1/2 teaspoon Cayenne pepper
  • 1 1/2 - 2 cups Masa Harina
  • 4 quarts Water, divided
  • 2 cup canned and crushed Tomatoes
  • 1/2 pound processed American cheese, cut into small cubes
  • 8 ounces Sharp Cheddar Cheese, shredded; I use Cabot Cheddar Cheese
  • 4 pounds cooked, cubed or shredded Chicken


WHAT TO DO
  • In large pot, combine oil, chicken base, onions and spices. Saute until onions are soft and clear, about 5 minutes. 
  • In another container, combine Masa Harina with 1 quart water. Stir until all lumps dissolve.
  • Add to sauteed onions and bring to boil. Once mixture starts to bubble, continue cooking 2-3 minutes, stirring constantly. This will eliminate any raw taste from the Masa Harina. 
  • Add remaining 3 quarts water to pot. 
  • Add tomatoes; let mixture return to boil stirring occasionally.
  • Add both cheeses to soup. Cook stirring occasionally, until cheese melts. 
  • Add chicken; heat through. 
  • Make it all and freeze in smaller portions, for nights like these; or cook only half the recipe.
IMPORTANT: You must mix the Masa Harina into 1 quart of water completely. If you add the Masa Harina into the soup directly it will be difficult to mix in and may be lumpy. If you feel 2 cups is too much Masa Harina, use a bit less. I have made this soup with 1 1/2 cups successfully.
