Oven-Roasted Rosemary Garlic Red Potatoes

Roasted potatoes are a very simple side dish to prepare and always a crowd favorite. Red potatoes, garlic cloves, olive oil, and rosemary sprigs roast at a higher temperature than normal, to create a crispy crust and dark golden exterior. They pair beautifully with just about any fish, chicken or meat dish.
 
Every time I make these easy potatoes, my family eats them up with no left-overs to spare! For a more intense flavor - mix the oil, rosemary, garlic, salt and pepper the night before and leave them to marry. Throw in some red pepper flakes if you 'd like to kick it up a bit. ENJOY!


Oven-Roasted Rosemary Garlic Red Potatoes
Simple, easy, inexpensive, and elegant, these potatoes are the perfect side dish. Roasting really sweetens up the potatoes. This recipe can easily be doubled or halved to suit your needs.

INGREDIENTS
  • 1 1/2 pounds small red-skinned potatoes
  • 1/8 cup good olive oil
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoons minced garlic (3 cloves)
  • 2 tablespoons minced fresh rosemary leaves
WHAT TO DO
  • Preheat the oven to 400 degrees F.
  • Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, garlic and rosemary; toss until the potatoes are well coated. 
  • Pour the potatoes on a baking sheet that's been covered with non-stick foil and spread out into 1 layer. 
  • Roast in the oven for 45 minutes to 1 hour, or until browned and crisp. Flip twice with a spatula during cooking to ensure even browning.
  • Remove the potatoes from the oven, season to taste, and serve.
