Shake It Up Saturdays! Floral Design

I love this breezy arrangement placed in an old mason jar.
It looks as if someone simply gathered up
heirloom roses and crab apples while out on their daily walk.

Sometimes, putting your flower arrangements in the same old vase or urn can get a bit boring. Do you have a certain container you ALWAYS use for roses? I DO! I'll be the first to admit that having a go-to container for your rose bouquets is handy, to be sure. What if you could make that same arrangement look spectacular by just switching up your methods and materials every now and then, would you give it a whirl? Not sure where or how to shake up your floral arrangements? Here are a few ideas to get you started.

Lemons go the distance in perking up this arrangement of roses,
chrysanthemums and button daisies.

Add Unexpected Elements
Tropical flowers and garden blooms often take center stage in most floral arrangements, but adding a few other elements from nature can make your display more visually exciting. Head outside and look for materials like dogwood branches, clippings from your boxwood hedge and other twigs from your yard. Or the next time you are grocery shopping throw a few lemons, apples, artichokes, ornamental cabbages or anything interesting from the produce section into your basket. You will be pleased at how well these items can jazz up an ordinary arrangement.

Go buy an old beat up pair of boots at the local thrift store and get busy.


Use Crazier Containers
Despite what you may think, vases and pots aren't the only containers that are good for holding flower arrangements. Almost anything can be turned into a unique container as long as water can be put inside. For example, vintage muffin tins filled with baby's tears and moss would create a charming kitchen arrangement. Tureens, vintage hand-cranked ice cream makers , seashells, pitchers, jugs, egg cups, toothbrush holders, old boots and even bird cages all have the possibility of becoming a container for your arrangement. If you should choose an item that will not hold water, a plastic liner can be bought at your local nursery...under $5.00, money well spent. That being said your options are limitless. Feel free to unleash your creativity and see what interesting objects you can find. Quirky objects make outstanding flower arrangements. Trust me on this.

I love the simplicity of 'daisies in blue'. Your dinner table will look
 cool, clean and crisp with these individual arrangements placed by each plate.

Play with Proportion
Your arrangements don't have to be symmetrical with the same size flowers to be eye-catching. In fact, many times, floral displays look better when the proportions are exaggerated. When planning for a special occasion try using a diminutive arrangement or tussie mussie  at each place setting instead of one large centerpiece. The effect will be much more intimate and each guest will feel you have created something special just for them.

 colors this arrangement pulls together and is pleasing to the eye.


Mix Up Your Color Scheme
The color of your containers often play a big role in your flower arrangements, and luckily there are plenty of ways to create dynamic displays. Matching blooms to the color of your vase creates a very clean tasteful arrangement. However using contrasting colors, for instance a blue vase with orange flowers, makes a visually strong statement. Shake up clear glass containers, by covering the stems of flowers with lemons or other fruit. Set the mood for fun with this whimsical look.


Try something different. Try something unexpected.
Try shakin' it up a bit.

Summer Classic: Lemon Sorbet


              
Fresh. Tangy. Cold. Perfect. Sorbet in the summer is such a special treat because it is the ideal ending to a warm-weather meal. It's a flavor explosion without the heaviness of a rich cream, butter or chocolate-based dessert. And for the cook, there's hardly a homemade sweet that is easier to whip up. It's even better when made ahead.

I love citrus flavors because they are light and so fitting in the heat of the season. But use your imagination to concoct different flavors. Depending on the sweetness of the fruit you are using, you will need to adjust the proportion of juice to simple syrup.  What fun to fill a whole pineapple or pomegranate with a delicious Summer
Sorbet.










Citrus Sorbet

  • 8 lemons or limes, juice and zest of 4 and 4 for creating the lemon serving cups
  • 2 cups water
  • 2 cups sugar

Sorbet
In a small saucepan over medium heat, make a simple syrup by combining the water and sugar. Heat until the sugar is dissolved. Remove from heat and let cool. Add lemon juice and zest to syrup and refrigerate until cold.

Place mixture in a Doniver ice cream machine or an old fashioned freezer and freeze according to manufacturer's directions. It can also be placed in your freezer and simply stir the sorbet every 30 minutes until frozen.
Garnish with mint and serve.
Serves 4.

Summer sorbet.....try it you'll be glad you did!

The Yankee Doodle Dandiest Entertainment Of Them All!

In honor of the Fourth of July I decided to personally review two of my all time favorite '4th of July' movies. Both are airing today on Turner Classic Movie Channel. Up first is the 1938 Drums Along the Mohawk with Claudette Colbert and Henry Fonda. It airs today at 2:00 pm Central Time on TCM.
In Revolutionary America, Gil Martin, played by Henry Fonda,  takes his new wife Lana, played by Claudette Colbert, back to his farm in upstate New York. The area is remote and a distance from the fort but they are happy living in their snug one room cabin. With America's Declaration of Independence, comes the threat of war. Soon the settlers find themselves at war not only with the British but their Indian allies as well. The Martin's farm is burned out as the war rages on and Gil joins in the fight for FREEDOM. This movie is one of my favorites for many reason, one being I love C. Colbert and I will watch any movie she stars in, but I think I love this movie for John Ford's vivid portral of a colonial couples resolution to fight for their freedoms and way of life. Never to back down, never to give in and besides isn't that what America stands for?
 Okay guys, this is it...one of the biggies and it falls within my top 5 all time favorite feel good movies! The 1942 Yankee Doodle Dandy starring James Cagney. It airs at 7:00 pm Central Time on TCM.
 Yankee Doodle Dandy
A musical portrait of composer/singer/dancer George M. Cohan. From his early days as a child-star in his family's vaudeville show up to the time of his comeback at which time he received the Congressional Medal of Honor from President Franklin D. Rossevelt for his special contributions to the US. This is the life-story of George M. Cohan, played by James Cagney, who produced, directed, wrote and starred in his own musical shows for which he composed his famous songs. This is one of those rare movies that makes you want to say 'They don't make them like that anymore'. This DANDY film is uplifting for its blatant patriotism and its representation of America as a place in which a gifted performer like George M. Cohan could rise from vaudeville to become the Father of American Musical Comedy. Isn't that what America stands for?

'Over There' is sung by the men in uniform during WWII. Cohan has just received the Congressional Medal of Honor from FDR. He originally wrote 'Over There' for the troops in WWI but has been used in wartime ever since.
It's TIMELESS and my favorite scene in the movie! ENJOY.
  
In today's world America is 'honoured' by songs like `Kick Ass USA', sorry mother. 'Yankee Doodle Dandy' is a wonderful reminder that we don't have to settle for that trash. That's right I said it. If the laws of our country give individuals the opportunity to write what they want, how they want, when they want....then I have the right to call it what it is...TRASH! This beloved movie of mine helps me remember there was a time when great men and women wrote songs like 'Over There', 'You're A Grand Old Flag', 'Yankee Doodle Boy' and 'Give My Regards To Broadway'. I know we live in a different world but the lyrics to these songs bring tears to my eyes as my heart swells with love and pride of our wonderful nation.
'You're a grand old flag,
You're a high flying flag
And forever in peace may you wave.
You're the emblem of
The land I love.
The home of the free and the brave
.
Ev'ry heart beats true
'neath the Red, White and Blue,
Where there's never a boast or brag.
Should auld acquaintance be forgot,

As simply as these words may be they truly hit home what our country is in desperate need of today. I understand that as Americans we have the freedom to speak our minds, but REALLY? Have you seen the lyrics or heard the song 'Kick Ass America'? Well let's just say it makes me want to cry for a whole different reason. It certainly doesn't bring to mind thoughts of loyalty and patriotism or inspire me to be a better American. It truly grieves my heart. I emplore you to google it, I refuse to reprint that here on my blog. MOVING on....this was Cagney's favorite role. Of all the movies he made, and there were many, this was reputed to be his all-time favorite hands down. I can see why and it really shows!
These two patriotic movies have one thing in common, they remind us, on America's Day of Independence, what America truly stands for. Ponder today what America means to you and be thankful for those that went before paving the way for our freedoms and way of life. In an age when people feel their country is under threat, these movies rouse nationalism by reminding us what made those patriots of long ago want to fight and to inspire great men to write songs of our Nation that will never die. And I say thank you patriots of old for my own personal freedoms and being able to dream the American Dream.

Party Trays And Entertaining

Outdoor summer parties are a great time to serve large Fruit and Dessert platters. Mainly because when it's hot here in Texas, I personally would rather eat fruit than anything else. Light and juicy, the addition of fruit and bite size desserts make the entire food selection that much more appealing. Encouraging an atmosphere of what I like to call 'casual welcome'. Allowing everyone to dig in and serve themselves. Now I Like THAT!


Fresh Fruit Platter
The most important thing about making a fruit platter is choosing ripe, seasonal fruit. After that, it's just cutting and arranging. I know from experience, this is the first platter to be emptied at parties, ALWAYS...without fail.

INGREDIENTS

For 10 to 12 people this is what I prepare:
  •  2 small ripe Melons, cut in half, peeled, deseeded and sliced
  • {I like to use one Cantaloupe and one Honeydew melon}
  • 1 Pineapple, peeled, cored and sliced
  • 2 bunches of Grapes
  • 1 pint Raspberries
  • 1 pint Blueberries
  • 1 pint Blackberries
  • 1 pint strawberries
  • 1 pint Figs, in if season
  • 2-3 Kiwis, peeled and sliced
  • 1 Papaya, peeled and sliced
WHAT TO DO

These are my fruit choices, they may not work for you. Your tastes may be totally different than mine or this selection of fruit may not be readily available to you. What ever you serve make sure to buy your fruit fresh a few days before your party. Wash everything except blueberries, raspberries and blackberries. You can go through your pints and make sure there are no leaves or stems. Make a base of lemon leaves on your platter. Organize your fruit into groups and arrange them on top of the leaves. A fruit platter can be assembled the day before your party and kept in the fridge.

  With summer’s abundance of fresh and delicious fruits, you can be creative in your choices. Be sure to include a variety of colors and tastes. Your guests will be delighted with this delectable array of the season's best.


Dessert Platter
This is THE EASIEST Platter to arrange! Now you will see WHY I keep
little homemade gems in the freezer.


 WHAT TO DO

 I pull an assortment of cookies, brownies, lemon bars and pound cake from my freezer and place them in the fridge to thaw out over night. The day of your party, as with the fruit, organize your desserts into groups and arrange on your platter. You can use lemon leaf as a base if desired but not necessary. AGAIN, serving what I like, HOW I like it, I make sure my brownies, lemon bars and so on are all cut into small portions. I love bite size desserts because I don't have a sweet tooth. If you are not serving a separate fruit tray, you might like to add fruit here with your other desserts. If you do not keep desserts in your freezer, this tray can be quickly put together with items from your local bakery. This dessert platter will be lovely and appreciated no matter how it's prepared, homemade or store bought, dessert trays are always a big hit.


Serving fruit and dessert platters at an informal gathering of much loved friends and family is an excellent idea. Encouraging everyone to feel welcome and serve themselves. Your friends will enjoy great food, enticing conversation and much laughter with their feet under your table. Remember our motto, 'Be Prepared', and prepare in advance.....ensuring that not only your guests enjoy an evening under the stars but the Host and Hostess as well.

Don't Sweat The Small Stuff!

.......or the large for that matter. When you are having friends and family over for an informal outdoor dinner the last thing you want or need to do is spend loads of time in the kitchen. You can prepare easy-to-make ahead side dishes that your guests will savor and enjoy. Simplicity is the key. Don't dwell on making history or you'll drive yourself NUTS!  Do it for the love of the get-together. Believe me your friends are coming to enjoy an evening of good conversation and laughter with you. So relax, take a deep breath and have a wonderful time. Serving tried and true recipes are your best bet providing you with no worries about huge mistakes. The following are a few of my favorite 'Summer Sides'. Enjoy.

Twice Baked Potatoes

Twice baked potatoes are a family favorite and the perfect choice to serve on the side at a casual outdoor dinner with friends and family. Featuring a combination of cream and cheddar cheeses, these potatoes are easy and impressive, never missing the mark!

INGREDIENTS
  • 10 large potatoes, about 7 pds
  • 1 small onion, finely diced
  • 3/4-1 pound of bacon, cooked and crumbled
  • ¼ cup chopped fresh parsley
  • 1 package 8-oz cream cheese, cut into small cubes
  • 1 package 8-oz sharp cheddar cheese, shredded and divided
  • 1 cup sour cream
  • 1/2 cup butter, melted
  • 3/4 tsp. Garlic Powder
  • Salt and Freshly Ground Black Pepper
  • 1 Scallion, finely chopped

WHAT TO DO
  • Bake potatoes at 350 degrees for 1 to 1-1/2 hours or until potatoes "give" when gently squeezed, indicating they are done. Cool 10 minutes. 
  • Cut potatoes in half lengthwise and scoop out the flesh from the baked potatoes into a large mixing bowl. 
  • Place potato skins on a non-stick foil lined baking sheet, skin side down and bake in a preheated oven at 350 degrees until crisp, 8-10 minutes. 
  • Add all other ingredients to the potato flesh in the mixing bowl, except ½ cup of shredded cheddar cheese, 1/4 cup bacon and chopped scallion. Mix well. 
  • Fill potato skins and sprinkle with remaining cheese, bacon and chopped scallion. 
  • At this point the potatoes can be refrigerated for 24 hours or even frozen for up to 3 months.
  • Bring filled potatoes out of the fridge and let sit on kitchen counter until room temperature. Preheat oven. Pop them in the oven when you are nearly ready to eat and cook at 350°F for 20-25 minutes or until cheese melts and the potatoes are bubbling.

Twice Baked Potatoes can also be cooked in a casserole dish, making it a cross between mashed potatoes and baked potatoes. When I decide to bake a casserole I double the recipe, cooking one and freezing the other. Making things extremely easy for the next go 'round. I DO EASY WELL!

FREEZING TWICE BAKED POTATOES

TO FREEZE FOR LATER USE: Cover potatoes with plastic wrap and place baking sheet in freezer, leaving several hours until potatoes are completely frozen. Remove potatoes from freezer and wrap each potato in a resealable plastic sandwich bag. Place wrapped potatoes into a 2 gallon resealable freezer bag.

TO COOK FROZEN POTATOES: Preheat oven to 350°F. Place potatoes on baking sheet and loosely cover with aluminum foil. Bake about 45 minutes. Uncover and bake an additional 15 minutes or more until potatoes are hot and bubbly. This method keeps the potato skins firm and crisp. If time is short, place potatoes in microwave and cook on high about 10 minute. Remove and then place in 350°F oven to finish cooking. YUM!


Corn and Black Bean Salad
Vine-ripened grape tomatoes and fragrant herbs complement the sweet fresh corn in this quintessential summer salad. So light and fresh, it makes a good accompaniment to any
Summer grilling menu. I could eat the whole bowl by myself.....truly.


INGREDIENTS

  • 3 cups fresh whole kernel corn, cut from 6 large cooked ears
  • 1 can {15 ounces} black beans, rinsed and drained
  • 10 ounces of sweet grape tomatoes, quartered or cut in half
  • 1 very small red onion, finely chopped
  • 1/4 cup minced fresh cilantro
  • 2 Tbsp. Italian parsley, finely chopped
  • 1 jalapeno pepper, seeded and chopped
  • Juice of 1 Lime
  • Zest from half a Lime
  • 1/4-1/2 teaspoon Sea Salt
  • Freshly Ground Pepper
WHAT TO DO

  • In a very large bowl, combine every thing except the salt and pepper. 
  • Cover and refrigerate until ready to serve. 
  • Add salt, if desired, and freshly ground pepper; give it a good stir and serve.


On occasion I will make my grandmother's recipe for Deviled Eggs.

Summer Entertaining Made Easy

I simply adore this relaxed outdoor party!
Warm-weather entertaining mixes fun, food and the great outdoors. You can host your ideal outdoor party, during the lazy days of Summer, with ease and confidence. Getting prepared and staying prepared is the key. Living in Texas has it's limitations, especially when it comes to having an outdoor party. It does get hot here in the Summertime. Unbearable so. Today is June the 30 and at 6 pm our temp topped out at 96 degrees F. For us, that's down right cool and time to break out the grill! The following are just a few ideas I jotted down for you, hope it helps.
Your lighting can be very simple to the more extraordinary. String lights or simple candles on the table, both work equally well. Decide what mood you want to portray.

'Be prepared', that's our motto....Mr.P was/is an Eagle Scout, he ties really great knots. There are a few things that I keep on hand during the Summertime....just in case we decide to be spontaneous. They would be, in no particular order, ALWAYS good quality disposable  plates, cups, napkins and utensils. Yes, you read it correctly, I do this and do it with great joy! It's fantastic to have friends round at the last minute and be able to throw everything out when they leave. YES I DO. Also, disposable items and teenagers just go hand in hand. If you have been to my house and I have served you a meal on a paper plate just know that it was a HUGE compliment! I am obviously very comfortable with you. Make sure your 'entertaining' dishes, glasses and silverware are clean and ready to be used. I use white dishes in the Summer, clean and cool looking. I have enough to serve 20. An easy way to collect white plates is to spend a few Saturdays hunting through garage and estate sales, they needn't match. Pull out any tablecloths to see if they are stained from previous use, if so clean and press them. If you are anticipating overnight guests or unexpected teenagers, make sure your linens, towels and blankets are fresh. *Here's a Link to an earlier post on overnight guests, it goes into greater detail. Do a walk through your home and garden. Make sure your outdoor  eating area is clean, uncluttered and provides ample seating to accommodate your guests. Now get yourself a pen and spiral notebook and Write It Down. Staying organized is easier when you keep everything written down. Go through your favorite recipes, fridge, freezer, and pantry making lists of things you want to keep on hand. These are a few of mine, you will need to organize your list around your own personal needs.
Years ago we invested in green wicker
outdoor furniture and white dishes.
Great for Summer parties.

STOCKING THE FRIDGE
  • Assortment of Quality Cheeses:
  1. Maytag Blue
  2. Cabot Extra-Sharp Cheddar Cheese
  3. Parmesan
  4. Goat Cheese
  • Cured Meats:
  1. Prosciutto
  2. Salami
  3. Smoked Ham
  4. Turkey
  5. Roast Beef
  • Cheese Tortellini
  • Eggs
  • Unsalted Butter
  • Sour Cream
  • Greek Yogurt
  • Lemon/Lime Curd
  • Store bought Cookie Dough
  • Assortment of Juices, Sparkling, Still and Mineral Water,
  • Milk
  • Assorted Crudités, these need to be check weekly for freshness

STOCKING THE FREEZER:
  • Frozen corn, cooked and cut from fresh ears of corn.
  • Hamburger and Hot Dog Buns
  • Breakfast Bread/Raisin Bread for over-night guest
  • Small loaves of Homemade Baked Quick Breads
  1. Banana Bread
  2. Zucchini Bread
  3. Blueberry-Raspberry Bread

  • Ground Beef and Turkey
  • All-Beef Hot Dogs, I buy Kosher
  • Ribs, Baby-back Pork
  • Meatballs, store bought or homemade
  • Shrimp, medium & large sized
  • Assortment of Fruit, all of the berries, peaches
  • Cubes of Watermelon, Honeydew, Passion Fruit; blend them for
  • fruity drinks.
  • *Homemade Brownies, individually cut and frozen
  • Homemade Lemon Bars, individually cut and frozen
  • Cookies, individually frozen
  • Blue Bell Homemade Vanilla Ice Cream
  • Puff Pastry, for quick desserts

STOCKING THE PANTRY:
  • Quality Whole Wheat Bread
  • A favorite Granola
  • Cans of Chili,
  • Black, Cannellini and Pinto Beans;
  • Rotel Tomatoes,
  • La Bella or Cento Italian Tomatoes
  • Assorted Drinks
  • Assorted Fruit nectars

  • Bags of Micro-wave Popcorn
  • Assorted chips and good Crackers
  • Jars of Good quality Olives, Artichoke Hearts,
  • Roasted Red Peppers, Sun-Dried Tomatoes, Tapenades and Salsa,
  • Good Dill, Sweet and Bread & Butter Pickles, Pickled Okra
  • Italian dressing
  • Hellman's Mayo
  • Bold & Spicy and French Mustard
  • Balsamic and Apple Cider Vinegar
  • Olive and Vegetable Oil

  • Assorted Seasonings and Spices {for Rib Rub}

  • Non-Stick Foil
Great way to serve cold drinks, Lemonade and Tea.
Like I said this is what I personally stock. These ingredients along with a few fresh produce items will provide 6 different salads and an assortment of finger foods like an antipasto tray, cheese tray, crudités platter and even a dessert tray. The most you will need to  do is take out and plate your goodies. You will also be able to make several different refreshing 'Mock-tails', breakfast for overnight guests, snacks, sandwiches, hot dogs and drinks for teenagers....and so much more. I know it may sound and look like a lot of trouble, however once everything is in place you are READY for a spontaneous fuss-free good time!

I happen to believe Great Hospitality is in the Details. With a little extra organization and good planning you can entertain with ease.
