Growing up, Saturday mornings were reserved for sleeping late and my Mother's Banana Nut Pancakes. My Mother was a whiz in the kitchen....she did it all. ALL. She baked, fried, roasted, stewed, simmered, braised, creamed, blanched, beat, broiled and boiled. I think I even remember a few poached eggs and a bizarre incident with wild grapes she gathered to make jam for our family. But those Banana Nut Pancakes, they were special. They still bring me feelings of nostalgia and security. They are home. They are Mom.
I don't think I appreciated all that my Mother did as I was growing up, such a shame. I look back now and see what an exceptional woman, wife and mother she was and still is today. Mom has worked hard along side my Dad for 50 years now. While we were growing up Mom was a pastor's wife, a student at Texas A&M, a substitute teacher, on the PTA board AND took care of her family. All at the same time! Like I said she DID it all. I will never be the kind of extraordinary woman my Mother is. Not even close, but I did learn my love of FOOD from her. I have carried on her tradition with my family. Saturday mornings and pancakes.
25 years ago on January the 17th Mr.P and I exchanged lasting vows and I was destined never to spend another Saturday morning at the home of Mr. and Mrs. C. However, isn't that the great thing about traditions and culture? You carry those things you loved most about your parents and your childhood incorporating them into your newly blended family.
Here at Porter-South we do sleep in most Saturdays, if at all possible, and pancakes are the name of our game. The kids love MeMe's Banana Nut Pancakes as well as Apple-Cinnamon-Walnut Pancakes, Chocolate Chip Pancakes, and Blueberry Buttermilk Pancakes. Everyone has their favorite version, these oh so delicious Blueberries are favored by Mr.P. Seeing as how we are nearly back to just the two of us I'm sharing my sweeties favorite recipe with you. I hope you are starting new and wonderful traditions for your family.....it takes so little time and they will remain in your children's memories forever. ENJOY!
Blueberry Buttermilk Pancakes
SERVES 4
INGREDIENTS
- 2 cups all-purpose flour
- 1/4 cup sugar
- 2 1/4 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 eggs
- 2 cups buttermilk
- 1/4 cup melted unsalted butter, plus some for frying
- 1 cup blueberries, fresh or frozen....I use Dole Frozen Blueberries in the wintertime
WHAT TO DO
- In a large bowl mix together the flour, sugar, baking powder, baking soda, and salt.
- Beat the eggs with the buttermilk and melted butter. Combine the dry and the wet ingredients into a lumpy batter, being careful not to over mix.
- Heat some butter in a skillet over medium heat. Spoon 1/3 cup of batter into the skillet and sprinkle the top with some of the blueberries. Cook for 2 to 3 minutes on each side.
- Serve with a dollop of whipped cream and maple syrup.
I have never found a homemade pancake recipe that I love. I'll try these out and see if they are the perfect ones. :-) The banana nut ones sound delicious too!

I haven't been on-line since Sunday....family feeling crummy yesterday. I will look for you on youtube. I now have my friends watching your videos....who knew there was such a thing as a mini-album?
