I may have mentions on a few occasions [tongue-in-cheek] that I am slightly addicted to salads. From the crisp to the crunch and the bursts of flavor in between, summer is just not the same without salads made with fresh produce. Same goes for salad dressings. Why by store-bought brands when you can quickly and easily make your own dressings -- minus the additives, plus all of the fresh goodness. Find one on the list below and give it a try. You never know, you just might find a new favorite!
- ¼ cup extra virgin olive oil
- 3 tbsp balsamic vinegar
- 1 tbsp maple syrup
- 1 tsp Dijon mustard
- salt and pepper
Strawberry-Basil Dressing
- 1 cup strawberries
- 3-4 basil leaves
- ½ lemon, juiced
- 1 tsp honey
- 2 tbsp olive oil
Blue Cheese Dressing
- ¼ cup blue cheese, crumbled [Maytag is the best!]
- ½ cup yogurt
- 2 tbsp mayonnaise
- ¼ tsp Worcestershire sauce
- salt and pepper
Mango-Lime Dressing
- 1 cup mango, peeled and cubed
- 2 limes, juiced
- ½ tsp honey
- 2 tbsp fresh cilantro
- 2 tbsp avocado oil
- salt and pepper
Roasted Red Pepper Dressing
- ½ cup roasted red peppers
- ¼ cup olive oil
- 4 tbsp white wine vinegar
- 1 clove garlic, minced
- 1 tbsp Dijon mustard
- salt and pepper
