Extra-Crispy Homemade Onion Rings

Okay, don't hate me but - wait for it - I hate frying. Yeah, I'm a Texas gal, and I do love my fried foods but I hate frying. I despise the 'grease' smell it leaves in the kitchen and the dreaded clean-up afterwards. However, I am a die hard fan of CRISPY ONION RINGS. They are one of my greatest food passions. I try and order OR's when I can, especially in places I have never tried them before. I have eaten my fair share of onion rings and found some to be wonderful and some that are nothing special. The best - in my opinion - can be found at the Southern Flyer Diner at the Brenham, Texas airport. 


We had heard great things about this high-flying 50's style diner and the golden jewels the chef serves up. As Mr.P and I were in College Station one weekend, visiting friends along with attending a Texas A&M football game, we made a special trip to the Brenham Municipal airport to see if these onion rings were all that, and you know what? They were! Extra crispy, hot and oh so delicious. In fact, everything we ate for lunch that day was fantastic. If you happen to find yourself in that part of Texas I highly recommend the Southern Flyer Diner. If not, I humbly share my favorite homemade recipe for onion rings. When we cook these at home, which is not often, Mr.P fries them outside, saving my kitchen from the greasy smell and messy clean up. Could someone please pass the onion rings?????

EXTRA-CRISPY HOMEMADE ONION RINGS
Crispy on the outside, sweet on the inside and hot all the way through -- they are most addictive!
SERVES 4 HUNGRY TEXANS

INGREDIENTS
  • 1 Egg
  • 1/4 cup Vegetable Oil
  • 1 cup Milk
  • 1 cup All Purpose Flour
  • 1/2 teaspoon Kosher Salt
  • 1 teaspoon Baking Powder
  • 2 large Sweet Onions*, sliced
  • 1/2 cup All Purpose Flour, for coating onions
  • Vegetable Oil, for frying
  • Extra Kosher salt
WHAT TO DO
  • Mix dry ingredients in a large bowl and set aside.
  • Mix egg, oil, and milk and add to dry ingredients. Mix until smooth.
  • Coat onions in 1/2 cup flour, dust off excess.
  • Dip in batter.
  • Fry in hot oil 375 F until desired shade of brown, about 3 minutes. Make sure to use a thermometer.
  • Remove the onion rings from the oil. Drain on paper towels.
  • Sprinkle with additional Kosher salt and serve hot.
*You can use white or yellow onions to make onion rings. Keep in mind that white onions generally have a stronger flavor than yellow onions. If you are a fan of sweet onions, consider Vidalia or Walla Walla onions.
