California Turkey BLT Wrap-n-Go

Here it is again, time for Friday night football! This last week has just flown by in our home as I'm sure it has for many of you.

I was thinking of the things I used to prepare for my kids to eat as they were running out the door to Friday night high school football
games. Our children were in the band and had very little time, if any, to come home on Friday afternoons. Meals had to be quick and more often than not, something they could carry with them. Sandwiches made an appearance at least one a month.

Which got me to pondering sandwiches and wondering why I did not make wraps instead. Wouldn't they be the most obvious choice?

You can roll a wrap in such a way that nothing falls out. Making it the perfect grab-n-go meal. Wraps are also ideal to make ahead. Wrapping them in wax paper, securing them with bakers twine and leaving them in the fridge for anyone to take on the run.

How easy is that? Do you think it's possible to roll back time and do Motherhood all over again? All of this knowledge is useless to me now! Wonder why God gives older people wisdom? Our children could have benefited from more knowledgeable parents. What the heck?

Below is my favorite grab-n-go wrap, the California Turkey BLT. Hopefully your little family can benefit and enjoy! Have a wonderful time at your Friday night football game, wherever you may be!

INGREDIENTS
  • Four 10-12 inch Flour Tortillas
  • 8 to 12 trimmed leaves of Romaine Lettuce, washed and dried
  • 12 ounces sliced cooked Turkey Breast
  • 8 thinly sliced Cheddar Cheese
  • 12 slices Apple-Wood Smoked Bacon, cooked
  • 1 vine-ripened Tomato, cored and sliced
  • 1 ripe Hass Avocado, peeled, cut into 16 slices tossed and sprinkled with 2 teaspoons lime juice
  • Kosher Salt and Freshly Ground Pepper
  • 1 cup Arugula, washed and dried
  • 1/2 recipe Ranch Dressing, homemade or store-bought
WHAT TO DO
  • Lay the tortillas on a cutting board and start to layer the ingredients.
  • Fan the leaf lettuce on the top three-quarters of each tortilla then lay the turkey and cheese slices on top, followed by the bacon, tomato, and avocado. Season with salt and pepper, to taste. Top with the arugula and some of the dressing. Fold up the bottom quarter of the tortilla and then start to roll each sandwich into a cone shape. Secure the tortilla with a toothpick, or wrap them in wax paper if you are making-ahead.
  • Serve immediately or wrap and refrigerate.

If you want to make your own ranch dressing, here's a great recipe.

    1. Kathleen, we also enjoy lettuce wraps as well. They aren't quite as practical for toting to a football game, but they are great at home!
