Good Morning To You!!

  Six years ago I found this muffin recipe in an old 1991 Gourmet Magazine. Morning Glory Muffins soon became one of my all-time favorite muffin recipes. They are beautiful carrot studded concoctions filled with fruit, raisins and nuts. What's not to love? The truth is they are super moist and curiously taste a lot like carrot cake making me a huge fan! These little 'glories' make a wonderful start to your day and will help sustain your hunger for lunch much longer than you might think. Bake them on Saturday and pop them into your freezer. On a rushed morning they make a great last minute grab for you or your children. Zap them in the microwave and you are on your way to having a great day! ENJOY!



MORNING GLORY MUFFINS
Ingredients:
1-1/4 cups sugar
2-1/4 cups unbleached all-purpose flour
1 tablespoon ground cinnamon
2 teaspoons baking soda
1/2 teaspoon salt
1/2 cup shredded, sweetened coconut
3/4 cup raisins, light or dark
1 large apple, peeled, cored and grated
1 cup (8 ounces) crushed pineapple, drained
2 cups grated carrots
1/2 cup coarsely chopped pecans or walnuts
3 large eggs
1 cup vegetable oil
1 teaspoon pure vanilla extract
                                                               




Directions:
1) Position a rack in the middle of your oven and preheat to 350 degrees F. Line standard muffin pans with paper liners. Set aside.
2) Whisk together sugar, flour, cinnamon, baking soda, and salt into a large bowl. Add coconut, raisins, apple, pineapple, carrots, and nuts, and stir to combine.
3) In a separate bowl, whisk eggs with the oil and vanilla. Add to dry ingredients and mix well.
4) Spoon batter into muffin tins, filling almost to the top of each cup. I ALWAYS use an ice cream scoop to fill muffin tins. So easy and less mess. Bake for 35 minutes or until a toothpick inserted into middle comes out clean. Cool muffins in pan for 10 minutes, then turn onto a rack to finish cooling.
Yield: 16 muffins
                                                            
My wonderful mother would wake me and my sister up in the morning singing this sweet 'Good Morning' song. I look back on it fondly, but as a teenager it was not quite my cup of tea! Now she sings it to my daughter when she goes to stay. The Morning Glory Muffins made me think of her, love ya mom!  Run your cursor down below and start your day with a muffin and a smile!
